Plesk database structure and relational information is available in a PDF → plesk-db-diagram.pdf
As of Plesk 8.2.1, the following tables exist in the Plesk database:

accounts - contains account passwords for FTP and e-mail accounts
actions - determines which actions in the Plesk interface are logged
ai_vendor_sources - UNKNOWN
anon_ftp - anonymous FTP configurations

BackupsObjects - backup repositories for domains/clients
BackupsRunning - currently running backup jobs
BackupsScheduled - client/domain backups that are scheduled to run
BackupsSettings - backup configurations for domains and clients
badmailfrom - used for server-wide blacklists

Cards - holds contact information for domain level users
certificates - SSL certificates, keys and requests for the domains
clients - information about clients
ClientsTraffic - daily counts of data transferred per each client
cl_param - Plesk interface options set by clients
Components - which Plesk components are installed along with their versions
cp_access - defines which IP's can access Plesk
custom_buttons - defines custom buttons that appear in Plesk

DashboardPreset - pertains to Plesk's dashboard configuration
DashboardPresetConfig - pertains to Plesk's dashboard configuration
data_bases - MySQL databases
DatabaseServers - database servers that Plesk is configured to use
db_users - MySQL database users
disk_usage - disk space occupied by different parts of each domain
dns_recs - DNS records found within DNS zones
dns_recs_t - DNS record templates (Server → DNS settings)
dns_zone - DNS zones for domains
domainaliases - connects domain aliases to their parent domains
domains - high level data about domains
DomainServices - data about mail, tomcat, and mailing list configurations per domain
DomainsTraffic - traffic used by each domain, calculated daily
dom_level_usrs - users that are allowed to log in at the domain level in Plesk
dom_param - parameters for the domains (logging)

event_handlers - when events happen in Plesk, special commands are configured here
exp_event - Plesk's event log

forwarding - configuration items for forwarding requests to domains

hosting - domain hosting parameters (Domains → domain name → Setup)

IP_Addresses - IP addresses configured on the server and in Plesk
itmpl - listing of interface templates
itmpl_data - data corresponding to interface templates

key_history - history of Plesk keys installed on the server
key_history_params - specific data pertaining to Plesk keys installed

Limits - sets quotas on hosting features for domains
ListsParams - caches data for how users sort lists in Plesk
locales - contains the locales that are available for use in the Plesk interface
lockout - failed login data
log_actions - specific data pertaining to entries in the actions table
log_components - the exact data changes pertaining to entries in the log_actions table
Logos - custom logos uploaded for the client interfaces
log_rotation - configuration for log rotation

mail_aliases - aliased e-mail accounts
MailLists - mailman mailing lists
mail_redir - mail redirects
mail_resp - mail auto-responders
mass_mail - configuration for mass e-mails to Plesk users
